This knife series is the result of a close collaboration between Hatsukokoro and one of the largest and most respected knife makers in Seki City, Japan. We are impressed by this knife. The fine SLD steel, beautiful finish, thin blades, and excellent price make it highly recommended by us.
SLD is a highly durable steel that maintains its edge for a long time, especially when not polished too finely, allowing the edge to retain some grip. We recommend finishing somewhere between 1000 to 3000 grit for a good balance of sharpness, bite, and edge retention. SLD is semi-stainless, meaning it resists rust well but is not completely stainless. Over time, the core steel will darken slightly, creating a beautiful contrast between the core and the cladding.
Important:
Please note that the edge is hard and thin. It’s essential to avoid putting lateral stress on the edge. When using a Japanese knife with a thin blade, the edge should always be in motion while cutting. Under no circumstances should you press the blade straight through an ingredient without moving the edge. Also, do not twist or pry with the blade to separate material.
